Abstract
This project aimed to determine an analysis of food waste reduction behaviours of the Scottish population; improve the understanding of the factors influencing the classification into behavioural segments; and identify the behaviours most likely to be targeted by behavioural interventions with the highest impact at individual or societal level.
Following a Rapid Evidence Assessment (REA) exercise of existing research and engagement with international experts on food waste behaviours, the scope of this study was refined to a causality and segmentation analysis of food planning behaviours, more specifically flexible meal planning, as they are among the behaviours most likely to be targeted by interventions. The choice was reinforced by the results of the data analysis in this case study, which also showed that these behaviours were significantly associated with self-assessed food waste.
A new conceptual model was developed, tested and estimated with survey data from 1,541 valid completed survey responses and analytical methods to estimate the effects of causal factors on food planning behaviours and (perceived) impact on waste. Latent class analysis (LCA) was undertaken to define the segmentation by flexible planning behaviours.
The causality (structural equation) models (SEM) explained a relevant share of the variance in the flexible planning behaviours and the self-assessed food waste in the household, all model relationships were statistically significant and confirmed the conceptual model's hypotheses.
