Abstract

Dietary transitions driven by income disparity increasingly impose a dual burden on health and the climate. This study integrates the Nutrient Rich Food (NRF9.3) index and Global Warming Potential (GWP) to evaluate the nutrition‑carbon trade-off in UK household food purchases in 2013. Our analysis reveals a “middle-income dietary trap”. Across Deciles 4–8, households increase their overall food purchases as income rises, but this expansion is dominated by carbon-intensive, nutrient-poor foods such as meats, dairy, sugars, and vegetable oils. As a consequence, calorie intake peaks while improvements in diet quality lag behind, and carbon emissions reach their highest levels among all income groups. This misalignment reflects a stage in which rising food quantity precedes nutritional gains, generating a dual burden of high‑carbon, low-nutrition diets. In contrast, high-income groups (Deciles 9–10) achieve modest improvements in both nutrition and carbon efficiency, associated with higher consumption of nutrient-dense, low-GWP foods such as vegetables, fruits, and seafood. These findings highlight a non-linear income-emission relationship, consistent with the Environmental Kuznets Curve hypothesis. Our decomposition analysis identifies two mechanisms shaping dietary carbon efficiency: a static opposition between expenditure and energy density, and a dynamic trade-off between nutrient density and the carbon intensity of nutrients. Policy interventions should adopt stage-specific strategies targeting middle-income households, where the dietary trap is driven by expenditure–structure imbalance, by steering substitution toward nutrient-dense, lower-carbon foods and accelerating structural dietary change.
